Christine’s Apple Carrot Slaw

ingredients

Greens

  • 6 oz. carrots
  • 1 scallion
  • 1 apple

Dressing

  • 2 tbsp. mayonnaise
  • 4 tsp. white wine vinegar

directions

  1. Grate carrots on box grater.
  2. Trim and thinly slice scallions.
  3. In a medium bowl, combine mayonnaise and vinegar. Add grated carrots and toss to coat.
  4. Quarter, core, and thinly slice apples. Add to bowl with carrots and toss to combine.
  5. Add scallions and season with salt and pepper.

Notes

When I make it, I never use scallions. I use a mandolin to thinly slice the apple. I set my mandolin using a julienne blade. If the apple juliennes are too long I cut them in half. I try to have the carrots and apple pieces about the same size. I also like to have about the same amount of carrots and apples visually. I always start with the carrots and then add the apples. Often, I end up with half or a quarter of an apple left over. That is the cook’s treat.

For tangy dressing increase the amount of vinegar. For sweeter dressing, cut back on the vinegar.
