Mary’s Salmon Patties

8 PATTIES | PREP TIME: 15 MIN | COOK TIME: 6-8 MIN

Ingredients

  • 1 14-oz. can salmon, undrained and flaked
  • 1 slice bread, shredded*
  • 3 tbsp. chopped green onion, including the green parts
  • 1 medium garlic clove, minced
  • 1 tbsp. fresh chopped dillweed or 1 tsp. dried
  • 3 tbsp. minced green bell pepper
  • 1 tbsp. flour
  • 1 egg
  • ½ tsp. sweet paprika
  • 1 tsp. salt
  • Ground black pepper
  • 3 tbsp. vegetable oil

Directions

  1. In a large bowl, gently mix together all the ingredients except the vegetable oil.
  2. Form into 8 patties, each about ½ inch thick.
  3. Heat oil over medium high heat in a large skillet.
  4. Cook the patties until browned on both sides, about 3-4 minutes per side.

Notes

*½ cup bread crumbs = 1 slice bread.

These are great with fried potatoes and sliced tomatoes. I use bread crumbs rather than soaked bread because I think it mixes in better.
