Mary Jo’s Fast and Easy Tomato Soup

Ingredients

  • ¼ cup butter or margarine
  • ¼ cup flour
  • 1 tsp. curry powder
  • ¼ tsp. onion powder
  • 1 can (46 oz.) tomato juice ¼ cup sugar

Directions

  1. Melt butter. Stir in flour, curry, and onion powders until smooth.
  2. Slowly add tomato juice and sugar.
  3. Cook uncovered until thickened and heated through, about 5 minutes.

Notes

I usually add a can of petite diced tomatoes and either remove a cup of the tomato juice or use 5 tbsp. butter & 5 tbsp. flour instead of the ¼ cup.

Want cream of tomato soup? Add sour cream, half and half, cream cheese. Want a little more spice? Add salsa. Want crunch? Add Doritos, Fritos, or for the kids, goldfish crackers.
