Mary English’s Date Cookies

~4 DOZEN |  COOK TIME: 12 MIN  |  PREHEAT 350°

Ingredients

  • 2 cups brown sugar
  • ½ cup shortening
  • ½ cup butter
  • 3 eggs, well-beaten
  • ½ tsp. baking soda
  • ½ tsp. baking powder
  • 1 tsp. vanilla
  • ½ tsp. salt
  • 4 cups flour
  • 1 cup dates, cut fine
  • 1 cup sugar 1 cup water

Directions

  1. Cook dates, sugar, and water 10 minutes. Cool slightly.
  2. Roll out dough and spread with date filling.
  3. Roll up jelly roll style and put in refrigerator until firmer.
  4. Slice and bake 350° for 12 minutes.

Notes

Can be frozen and slice and bake as needed.

From Allyson: To make the dough, I creamed together the brown sugar, shortening, and butter until fluffy. Then I added the eggs and vanilla and mixed until well-incorporated. In a separate bowl, I mixed the baking soda, baking powder, salt, and flour. I added the flour mixture to the sugar mixture and beat until incorporated. I also made the date mixture the night before and chilled it overnight.
