INGREDIENTS
- ½ cup margarine or butter
- 1 cup sugar
- 2 eggs
- 1 cup mashed bananas
- 2 tbsp. lemon juice
- 2 cups flour
- 3 tsp. baking powder
- ½ salt
- ½ cup chopped walnuts or pecans (optional)
- 1 tsp. grated lemon rind (optional)
DIRECTIONS
- In a large mixing bowl, cream together the margarine and sugar until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Beat in bananas and lemon juice.
- Sift together the flour, baking powder, and salt. Add to creamed mixture and mix gently just until flour disappears.
- Carefully fold in walnuts and lemon rind (optional step).
- Pour into well-greased 9×5” loaf pan.
- Bake in preheated 350° oven for 50-60 minutes, until a toothpick comes out clean. 8. Cool 10-20 minutes. Remove from pan to cooling rack.
Notes
This recipe comes from the book Even More House Specialties by Deanna House. The lemon juice keeps the bread from turning brown. It typically takes 2 bananas to get a cup of mashed banana. Overripe bananas give more banana flavor and are easier to mash.
